1대 사장님 故수영화 대표님께서 처음 가게를 여실 때, 이곳이 늘 새롭게 발전하는 터전이 되길 바라며 상호를 ‘신발원’이라 지으셨습니다.
상호명과 함께 그 마음까지 계속해서 함께해오고 있습니다.
When founder the late Soo Young-hwa opened the shop, he named it Shinbalwon, hoping it would always be a place that continues to grow and evolve. Along with the name, we proudly carry forward that spirit and vision to this day.
BRAND STORY
1951년, 국제시장에서 시작한
작은 가게
1950년 6.25 전쟁으로 많은 사람들이 부산으로 피난을 내려왔습니다. 1대 사장님 故수영화 사장님의 가족들도 마찬가지였습니다.
그 시절 모든 사람들이 그렇듯 전쟁 중이었던 사람들은 먹고 살기 위해 무슨 일이든 해야 만 했습니다. 허나 화교였던 사람들은 할 거리가 그리 많지 않았지요.고향을 벗어나 '무얼 해서 먹고 살까' 고민하던 수영화 사장님은 국제시장 골목에 작은 터를 잡아 집에서 먹던 중식 만두와 빵으로 장사를 시작하셨습니다.
어려움 속에서도 억척스럽게 일궈낸 가게는 금새 "미싱골목 호떡가게"로 입소문을 타게 되었습니다.
"A Small Shop That Began in 1951 at Gukje Market In 1950"
the outbreak of the Korean War forced countless people to seek refuge in Busan. Among them was the family of the late Soo Young-hwa, the founder of Shinbalwon. Like many others during those difficult times, survival meant finding any way possible to make a living. Having left his hometown behind, Soo Young-hwa opened a small stall in an alley of Gukje Market, selling homemade Chinese-style dumplings and buns. Despite the hardships, the shop quickly gained popularity and soon became known as the famous “Hotteok Shop in Misul Alley.”
부산 차이나타운으로
10년 넘게 장사한 국제시장을 떠나가는 아쉬움을 뒤로 하고, 신발원은 화교들이 모여있던 차이나타운으로 다시 터를 잡았습니다. 당시 시집오시자마자 일을 배우셨던 2대 사장님, 은서연 사장님은 새벽 4시부터 일어나 부산역에서 아침을 드시러 올 새벽 손님들을 위해 많은 양의 빵과 만두를 만들어 놓으셨습니다.
이후 남편빚까지 더해져 가게가 문을 닫을 지경이 되었을 때에도 아들, 딸들을 생각하며 꿋꿋하게 버티셨습니다.
"Moving to Busan Chinatown"
After more than ten years of business at Gukje Market, Shinbalwon relocated to Busan’s Chinatown, where many refugees had settled during that time. The second-generation owner, Eun Seon-yeon, who had learned the trade from an early age, would wake up at 4 a.m. each morning to prepare large quantities of buns and dumplings for early customers arriving at Busan Station for breakfast. Even when the shop faced the possibility of closing, she persevered through difficult times, drawing strength from the thought of her children and family
즉석 만두의 시작
현 대표 수의덕 대표님은 어릴 적 갓 쪄내진 만두의 맛을 잊지 못하고 그 맛을 그대로 손님들께 보여드리고 싶다고 생각하셨습니다
"어머니, 제가 장사 하면, 즉석만두로 팔고 싶은데 어떻게 생각하세요?"
처음에 은서연 사장님은 반대하셨습니다. 만두를 미리 빚어놓고 쪄서 나가는 것은 몇 명이면 되지만 주문 받는 즉시 만두를 빚고 찌고 준비하는 것은 상상도 할 수 없는 인력이 필요하기 때문입니다.
하지만 은서연 사장님은 결국 아들이신 수의덕 대표님의 말을 믿어보기로 하였습니다. 대표님께서 직원들의 월급만큼 돈을 아끼겠다고 어머니를 설득시켰기 때문이죠.
더욱 주문 즉시 손님께 나가는 만두를 빚고 쪄서 나가는 방식은 만두 속 돼지고기의 풍미를 더욱 충만하게 해줄 뿐만 아니라 또한 오픈된 주방에서 많은 직원들이 만두를 빚고, 수십개의 찜기에서 만두를 쪄내는 모습이 손님들의 시선까지 사로잡는 신발원의 마스코트가 되었습니다.
"The Beginning of Freshly Made Dumplings"
As a child, the current CEO, Soo Ik-deuk, never forgot the taste of freshly made dumplings. He dreamed of sharing that same experience with customers. “Mother, if I take over the business, what do you think about serving dumplings made fresh to order?” At first, his mother, Eun Seon-yeon, opposed the idea. Preparing dumplings in advance was common practice, but making and steaming them only after receiving an order would require far more time and effort. Eventually, she decided to trust her son’s vision. His commitment and determination convinced her that the challenge was worth pursuing. Freshly made-to-order dumplings not only enhanced the rich flavor of the filling but also created a unique experience for customers. Watching staff handcraft dumplings in the open kitchen and steam them fresh throughout the day soon became one of Shinbalwon’s most distinctive traditions.
월병 신메뉴 개발
은서연 사장님이 운영하시던 시절, 신발원은 공갈빵, 깨빵, 팥방 등 중식 빵 들을 내놓았습니다. 당시 빵들도 제법 인기있었지만, 은서연 사장님은 중국의 명절 디저트인 '월병'도 함께 있으면 참 좋겠다고 생각하셨습니다.
레시피 개발을 위해 연구도 하고 책도 들여다보았지만, 한국은 월병을 판매하는 곳이 매우 적을 뿐만 아니라 그런 레시피를 배울 만한곳도 마땅치 않았죠. 하지만 은서연 사장님은 포기하지 않고 대만으로 갔습니다. 대만에 있는 여동생에게 소개받은 셰프님에게 레시피를 전수받기 위해서였습니다. 셰프님에게 배운 레시피와 연구를 거듭한 끝에 신발원만의 월병이 탄생하게 되었습니다.
이처럼 현재에 안주하지 않고 계속해서 발전하기 위해 노력하고 연구하는 자세는 신발원이 성장할 수 있었던 밑거름이 되었습니다. 지금도 신발원은 꾸준한 레시피 개발과 신메뉴 연구에 박차를 가하고 있어요.
"The Development of Shinbalwon’s Mooncakes"
During the years when Eun Seon-yeon ran Shinbalwon, the shop offered a variety of traditional Chinese baked goods, including gonggal bread, twisted doughnuts, and red bean buns. While these items were popular, she believed that adding mooncakes, a traditional Chinese festive dessert, would make the menu even more special. At the time, mooncakes were rarely sold in Korea, and it was difficult to find anyone who could teach the recipe. Refusing to give up, Eun Seon-yeon traveled to Taiwan and learned the craft from a pastry chef introduced by her younger brother. Through continuous research and refinement, Shinbalwon’s own mooncake recipe was finally created. This spirit of never settling and always striving to improve has been the foundation of Shinbalwon’s growth. Even today, we continue to develop new recipes and explore new menu ideas while building on our tradition.

For more than 70 years and across three generations, Shinbalwon has been supported by loyal customers. Many families who visited during the first and second generations continue to return today with their own children and grandchildren.
